Raw Chocolate Brownies
Ingredients
1 and a half cups raw walnuts
1 and a quarter cups chopped medjool dates
Half a cup cacao
Quarter cup dessicated coconut
Quarter cup dried cranberries (optional)
2 tablespoons water
Pinch of good quality salt
2 tablespoons crushed raw nuts - any variety - almond, cashew, walnut
Method
Put walnuts in food processor and process until in small crumbly pieces. Remove.
Add dates, coconut, water, cranberries, salt and cacao to processor and process until all ingredients are combined and then add the walnuts and combine.
Press the mixture into a square tupperware container or small cake tin, making sure it is even in thickness.
Place in the freezer for at least 1 hour before serving
Cut into squares and sprinkle with crushed nuts.
