Raw Coconut, Date and Cranberry Slices

Ingredients

1 cup medjool dates, pitted

¼ cup almonds

¾ cup cashew

1 cup coconut – desiccated

½ cup dried cranberries

2 tablespoons pumpkin seeds

2 tablespoons coconut oil

1 lemon

Pinch of salt

 

Method

Melt coconut oil, juice the lemon and add to food processor with all the other ingredients. Blend until everything is well combined. Scrape mixture onto a baking tray and flatten to about 2 cm in thickness. Cover with cling film and refrigerate for 1-2 hours. Remove from fridge, cut into 8 bars and enjoy. Store in fridge in a sealed container.
